Earth, water, animals, plants, fruit, people….in other words, the farm.
It's not easy to produce most of the food and drink for ourselves and our guests on just 8 hectares of hilly terrain - but it is possible.
It is possible because this land has been used for generations by farmers whose main objective was subsistence rather than profit. One of the benefits of this is the range of old varieties of fruit tree to be found here.
Our aim is to give continuity to this relationship with earth, water and plants. To do so we use methods of organic agriculture and permaculture, providing quality and diversity (thus the opposite of monoculture). We pay the greatest attention to the water cycle in order to merit the term "sustainable agriculture"
We have been given the gift of the earth, which we use today and will pass on to others. It is our duty to do everything in our power to increase its fertility rather than reduce it.
We produce wine, olive oil, almonds, walnuts, hazelnuts, (pistachio and carob in years to come - the trees are still young) and lots of seasonal fruit and vegetables. Also wheat, potatoes, red onions (the speciality of the area), beans, peanuts; in short, anything that will grow in a Mediterranean climate. We also keep chickens, goats, pigs and rabbits.
